Pumpkin Bread/Muffins
From the kitchen of my dear friend "Kitty Kat"

1/2 cup vegetable oil
2 eggs
1 1/2 cups sugar
1/2 can pumpkin (approx 1 cup)
1/3 cup water
1 3/4 cups flour
1/2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsps pumpkin pie spice
preheat over to 350 degrees
1. beat eggs
2. add remaining "wet" ingredients
3. in separate bowl: sift together all "dry" ingredients
4. add dry to wet until well incorporated
*add 1/2 cup chopped walnuts or pecans if desired
5. pour into greased and floured loaf pan
6. bake 50-60 minutes

I'm only showing half the loaf because Grace and I had some for breakfast.

Pumpkin m&m cookies
I'm having little visitors tomorrow aka my nephews so I wanted to make a treat for them. They're supposed to be chocolate chip pumpkin cookies but I didn't have choc chips so I had to make due with what I had. They came out rather well.
This recipe is from my friend Marin:
14.5 oz can pumpkin
2 eggs, slightly beaten
2 cups sugar
1 cup vegetable oil
2 tsp milk
2 tsp vanilla extract
1 tsp salt
1 tsp cinnamon
12 oz package choc chips
4 cups flour
4 tsp baking powder
Preheat oven to 375.
In large bowl combine pumpkin, eggs, sugar, oil, milk, vanilla, salt, baking soda, cinnamon and choc chips.
In a bowl blend flour and baking powder.
Add flour mixture to pumpkin mixture and stir well.
Use 1 tablespoon to make small dollops on an ungreased baking sheet.
Bake 10-15 mins.
Cool on rack. Makes 24 cookies.
